BTW -- I've been using this worksheet to plan my toddler's lunches:

 http://justbento.com/handbook/downloads/weekly-bento-planner

It has lunches broken down by protein / carb / vegetable / fruit, and it makes it very easy to plan a week's worth of lunches in advance. I am not normally this organized, but I find if I sit down on Sunday and plan out the week's meals, I can relax during the week since I know what to pack each night for lunch.

I'm new to this, but here are some things I'm planning to pack:

quiche with lots of veggies

onigiri (triangle sushi) with pickled plum, packed with a seasoned hard-boiled egg
(You can buy these from Nijiya Market or make onigiri at home. There are a couple different ways to makeseasoned hard-boiled eggs.)

lentil salad

Indian vegetarian food: saag paneer with rice and daal

Thai yellow curry with salmon or tofu and lots of veggies over brown rice or black rice (get the pre-made Mae Ploy yellow curry paste in plastic tubs, fry the paste in a little oil until it smells delicious, add coconut milk, toss in the veggies / salmon / tofu and simmer gently until done)

vegetarian black bean soup

vegetarian red beans and rice

bean / cheese / veggie mini quesadillas

Edamame - shelled or unshelled - is a hit in our family and a great source of nut-free, meat-free protein!

If I have any leftover pasta I mix it with some olive oil and balsamic vinegar, mozzarella balls or any cheese I have on hand, maybe some leftover veggies or cut up cherry tomatoes. Doesn't need to be kept warm which is great. And you mentioned stir fried rice...I always make a little extra rice when having it for dinner just for this purpose. My kids love it with terriyaki baked tofu, peas, corn and eggs. And soy sauce of course! Thanks for the other great ideas!

'He's ready but I'm not' has definitely been a constant weepy refrain in our house. I cried just reading the article -- until laughing loudly at the end! We are looking forward to next week with great excitement and anticipation.
